Getting Kids to Eat Their Veggies!

Veggie Soup is a Great Way to Get Kids (and Adults!) to Eat More Veggies
As the mom of 4 kids, I know how challenging it can be to get kids to eat their veggies.
With a little planning and creativity it isn't all that hard to instill healthy eating habits!
My strategies include:
* Keep a bowl of fresh fruit or a plate of cut up raw veggies on the counter. When kids walk by they are more likely to pick up something to munch on.
* Always include a fruit and a veggie for lunch and dinner.
Getting 7-9 servings of fruits and veggies takes a bit of work. If you don't have both at lunch and dinner it's easy to get behind. Incorporating healthy snacks like Carrot Parathas with Avocado Chutney will help as well!
* Mix things up.
Kids like variety. Try a new fruit or an unusual veggie. When you're at the store, challenge your kids to pick out something new and unusual.
* Salad Bar make healthy meals.
Most kids like to pick and choose what to put on their plate. Having a "salad bar" on your counter with bowls of different toppings makes eating a salad for dinner more fun!
* Fill up on Soup.
I love making a pot of Veggie Soup such as pictured above, and offering it to my kids before dinner or an afternoon snack. The combination of tomatoes and oregano almost.... reminds them of pizza!
I am really a believer in teaching kids good nutrition by teaching their taste buds to like and enjoy healthy foods like fruits and veggies. The more they eat them, they more they (might!) enjoy them.
